Roland Mesnier’s Chewy Chocolate Chip Cookies


So, how do they make chocolate chip cookies at the White House? Well, under Roland Mesnier’s watch, apparently they made them soft and chewy.

In Dessert University, White House pastry chef Roland Mesnier gives a recipe for chocolate chip cookies  (also go here or here) that are made especially soft and moist with the addition of molasses.

Another secret to these cookies is baking them at 400 degrees. The high heat browns the outside, while leaving the inside soft and moist.


These were a huge hit with my family, especially my husband, who only like chocolate chips when they are soft, never crisp!
