Caramelized Apple Slices

This is half a recipe. To be precise, I made the first half of Jacques Pepin’s Skillet Apple Charlotte. (update: this link doesn’t work, so go here to Food & Wine.)

You saute apple slices with butter, honey, and maple syrup until they caramelize. The apple slices are infused with sweet buttery caramelly goodness. Mmmmm. The second step is topping the whole thing with a bread crust (sort of crossing apple charlotte with tart tatin) and baking it in the oven. This is part I skipped. The apples were fabulous, but I would absolutely do the bread crust if I was serving this to company. My husband thought the apples were a bit too rich, but I couldn’t stop eating it. Interesting note: on the video Pepin did for Mizrahi, he shows adding lemon zest, which isn’t in the written recipe.
