Here is a recipe from the California Walnut Board that I changed around a little bit.
Quinoa with Mango and Walnuts
1 cup quinoa, cooked per package directions
1-2 mangoes, peeled and diced
1/3 cup mint (parsley or cilantro should work, too)
minced hot pepper
chopped red bell pepper
3-4 sliced scallions
1 cup walnuts, toasted and coarsely chopped
juice of 1 lime (or more)
1 Tbl. minced ginger
1 Tbl. curry powder
2-5 Tbl. olive oil (I used avocado oil, but olive oil would be fine)
salt, pepper, to taste
Combine the cooked quinoa with the other ingredients.
I think avocado would be nice in this salad, too.
