Moosewood’s Curried Red Lentil Burgers

These vegetarian (vegan, actually) burgers were fantastic, not to mention wonderfully nutritious.

They are also not so hard to make, provided that you already have about 2 cups of cooked brown rice on hand.

Here is how they are made: cook a cup of red lentils in boiling water until tender with some tumeric and salt. Meanwhile, saute onions, garlic, celery, red bell pepper (I didn’t have this, and it was okay). You then add chopped fresh ginger, curry powder, cinnamon, and salt. You mix together the lentils, brown rice, sauteed vegetables, and some finely chopped cashews and lemon juice. Make patties (the recipe states you get 6 patties, but I think 8 is more like it), and then bake them on an oiled baking sheet at 400 degrees for about 20 minutes.
