Jeanne Lemlin, in Simple Vegetarian Pleasures, says that these white bean burgers taste like stuffing. She’s really not kidding. They taste exactly like the Thanksgiving dish made with bread. The recipe couldn’t be easier: mash beans with some aromatics (she calls for celery, garlic, and red onion), a bit of poultry seasoning (which has sage, rosemary, thyme, and some other stuff), bread crumbs, a bit of vinegar, a bit of soy sauce, and salt and pepper. Shape and fry.
I used a can of small white beans, rinsed and drained well, with a 1/2 cup of unseasoned bread crumbs. Instead of the celery, onion, and garlic, I used a minced shallot. In addition to the tsp. each of soy sauce and red wine vinegar, I added some Lawry’s seasoning and freshly ground pepper. Oh, and the all important 1/2 tsp. of poultry seasoning. I suppose, instead of the poultry seasoning, you could use seasoned bread crumbs and get a different flavor.
