Savory Feta and Roasted Red Pepper Muffins

This is from Bon Appetit’s RSVP section: Savory Spinach, Feta, and Peppadew Muffins. Except that I used jarred roasted red peppers instead of peppadews and I left out the spinach.

The muffins have a light orange-ey color from the paprika, and a slight sweetness from a touch of sugar. The crumb is very moist and open from the moisture given off by the chunks of feta and pieces of pepper. They are best eaten slightly warm.

There is something about these muffins that makes me think of corn muffins. I think these might be nice with some corn added in. Or maybe you could make other kinds of savory muffins using this as a base. like blue cheese/pear or dried tomato/basil/corn/cheese.
