I was going to make the cabbage soup from Wholesome Harvest, but then my husband reminded me that he craves his grandmother’s soup, which has potatoes in it. So, I kind of veered off course . . .
It doesn’t look so exciting, but my husband scarfed down two huge bowlfuls.
Sort of Like Bubbie’s Cabbage Soup
Adapted from Carol Gelles’s Shredded Cabbage Soup. Leave out the potato and add 2 Tbl. brown sugar plus 1/2 Tbl. lemon or lime juice, and use whole tomatoes in thick puree if you want to make Carol Gelles’s recipe.
1 1/2 Tbl. of oil
3 cups of shredded cabbage (6-9 ounces)
1 1/2 cups chopped onion (6 ounces)
Saute onion and cabbage in oil until tender. Stir in:
1 peeled and chopped potato
1 can stewed tomatoes (14.5-16 ounces)
1/4 tsp. ground ginger
2 cups water
1/2 tsp. salt
1/4 tsp. ground pepper
Simmer everything for at least 20 minutes.
Serves 4
