I love Passover macaroons. These cookies taste like a cross between almond macaroons and the coconut macs that come in the can.
Debbie Ghidi’s Macaroons
Adapted from this recipe
4 egg whites
2 cups sugar
4 cups ground almonds (12 ounces)
1/2 cup coconut (I think I doubled this)
1 tsp. vanilla
2 cups coffee flavored mini chocolate chips
Combine all the ingredients together in a bowl. Shape mixture into tsp. sized balls. Place 1 inch apart on parchment lined baking sheets and bake for at 325 degrees for 15-17 minutes.
