I was very amused by this t-shirt of Han Solo and Chewie as a Solo cup and cookie. So, I equipped a Solo cup with a cardboard Solo Blaster and made some Wookie Cookies. Actually, the cookies are just my favorite Pesach cookies with some white and dark chocolate chips used to make eyes, a nose and some teeth.
They’re Chewie! And gluten-free! Adapted from my favorite Pesach cookies.
Melt together in a medium heat-proof bowl set over a pot of hot water:
3 Tbl. oil
12 ounces bittersweet chocolate
Let the chocolate cool a bit while you beat the eggs with the rest of the ingredients.
Whip together in a mixing bowl until light and fluffy:
3 eggs, large or extra-large, room temperature
3/4 cup sugar
Add to the eggs:
1 Tbl. instant coffee powder
3 Tbl. cocoa
3 Tbl. potato starch
1/2 tsp. baking powder
1/4 tsp. kosher salt
Fold the melted chocolate into the eggs.
10 ounces chocolate chip or chopped chocolate
Scoop the batter onto parchment lined baking sheets. Divide the batter into about 30 cookies. Decorate the cookies with white and dark chocolate chips to make wookie faces.
Bake at 350 degrees for 12 minutes. Cool completely before removing from baking sheets.
