Spiced Apple Cider Carrot Tzimmes

This year, I made tzimmes by simmering carrots with apple cider, spiced with cinnamon, ginger and a pinch of nutmeg. As it bubbled away on the stove, the tzimmes filled the air with the intoxicating aroma of mulled cider.

Spiced Apple Cider Carrot Tzimmes
2 lbs. carrots, sliced
apple cider, to cover carrots in pot
honey, to taste
3/4 tsp. cinnamon
1/4 tsp. ginger
pinch nutmeg
1/8 tsp. pepper
1/4 tsp. salt
20 prunes
1 tsp. vanilla, optional
Put carrots in pot and add enough cider to to the pot to just cover carrots. Simmer until carrots are tender and cider is starting to reduce. Add the spices and a generous drizzle of honey.Simmer until the cider reduces down some more, below the top level of carrots. Add the prunes. Simmer until cider reduces to a syrup. Let cool slightly and add vanilla, if desired.
