Vegan Pâté (Chopped Liver)

Susie Fishbein has a recipe for egg-less vegetarian chopped liver in her book of light recipes, Kosher by Design Lightens Up. The recipe calls for canned peas, walnuts, onions, and a combination of chickpeas and kidney beans. I liked the idea of using beans instead of eggs, but I applied the concept to my own recipe for vegetarian chopped liver.


Tastes Like the Real Thing Vegetarian Chopped Liver

I will try to post a better picture later, but I don’t want to delay posting about this delicious and healthy vegetarian chopped liver.

I have served this appetizer many times, and invariably someone assumes it is real or asks (after tasting it!) “Is this real chopped liver?!”

The taste and texture is that close to the real thing. (more…)
