Hamantaschen French Toast Casserole

Imagine this: warm, buttery, vanilla and cinnamon scented French toast stuffed with whipped cream cheese and jam.  So good. Now picture that each piece of French toast is shaped and filled like a hamantaschen. Yummy and festive.

Another bonus: this is easily prepped the night before. All you need to do is pop this in the oven the day you want to serve it.

Hamantaschen Challah and Chocolate French Toast Casserole

I am a bit late posting this. The Shabbos before Purim I made Hamantaschen Challah: egg rich, vanilla scented dough surrounding a dark chocolate filling.

Slices show an oval of chocolate bread floating in the center of the challah.

I used leftovers to make decadently rich baked French toast (a kind of bread pudding, topped with a toffee sauce and milk chocolate chips).

Here is a little something different to make with leftover challah besides french toast. The basic recipe (for cherry pancakes, or Kirschpfannkuchen) comes from a German cookbook, Mein Kochbuch, by Elizabeth Schuler (as translated by Joy Gary). I added in chopped bananas and substitued cornmeal for the flour in the recipe.
