I love sour cherry soup. I have made it from bottled and even canned cherries, but nothing compares with fruit soup made from fresh sour cherries.


Vanilla Peach Soup with Cardamom Cream

Fresh farmers market peaches pureed with orange juice, sweetened with blueberry honey, flecked with fragrant vanilla seeds, topped with exotic cardamom cream . . .  Doesn’t that sound fabulous? That is what I thought when I saw this Cooking Light recipe by Jean Patterson and Danae Campbell (from August 2000, not on Cooking Light’s website).

Sour Cherry Peach Soup

My husband was craving fruit soup. His favorite is the kind made with cream (or rather pareve cream), frozen stawberries, mandarin oranges, and pineapple.

I asked him if I could give him the kind made with pureed peaches and berries and orange juice. The recipe is really simple.  You take a pound of each of frozen peaches and strawberries (thawed) and put them in a blender with orange juice to cover. Puree and adjust the flavor with a couple tablespoons of sugar and a teaspoon of cinnamon. (more…)
